Our Nova Resende coffee comes from 74 small holder farms in the mountains of the South of Minas Gerais, more specifically on Morro da Ibituruna (Ibituruna Peak). The plantation is shaded for the majority of the day, helping the coffee fruit to develop a thicker membrane that actually delays its maturation and retains more of its sugars. As a result, more of the mucilage (also known as the honey) will stay with the bean during the drying process to develop a unique fermentation. In the cup, Nova Resende Honey Coffee have a bright acidity and distinct honeylike sweetness. Coffee is fully traceable to the community of farmers.
